Salads are the stereotypical “health food,” and there's good reason for this. Dark leafy greens like spinach, romaine lettuce, and kale are full compounds which enhance health, have cancer fighting benefits, and provide minerals, chlorophyll, and phytonutrients missing in most people's diets.
But there's a problem I faced with greens. No matter how much I knew they were good for me, I hated them and couldn't get myself to eat them on a regular basis. While I could certainly enjoy a nutritionally void iceberg lettuce salad with not so healthy dressings and toppings, I couldn't stomach the truly nutritious salads with dark leafy greens like spinach.
I tried cooking greens, but besides the fact that it takes away some of the health benefits and nutrients (still better than nothing), it still didn't taste that great and I would often end up with a slimy mess.
Then I discovered a way to make raw spinach taste abso-frickin-lutely amazing in only sixty seconds!
I call this “The Sixty Second Salad”
- Take 6-8oz of spinach (can use any leafy green) and put it in a large container.
- Top with a pinch, or about ¼ teaspoon, of unrefined salt.
- Crush the spinach down with hands for about 30 seconds until its condensed.
- Top with a healthy dressing of choice such as any of the following: Salsa, avocado, dried fruit, spices, coconut oil, olives, apple cider vinegar, dijon mustard, etc.
I may also use any healthy homemade sauce which you'll learn about later.
This recipe is great not only because it improves the flavor of the spinach, but
also because it condenses it down into a much smaller size making it easy to eat
quickly (regular salads take me 10-20 minutes to eat vs. 3-5 for this). The
smaller size also makes it extremely portable to stick in a to-go container to take
with you on the run.
Add some protein such as canned black beans, tuna, or already cooked meat and
you have a complete healthy meal.
Quick, portable, healthy, and most of all tasty! How does it get any better than
that?
